Bon "Apple"tit!
It's time for falling leaves, sweatshirts, football and - apples! Enjoy these two great apple recipes from my grandmother and I's kitchens.
Host: So, I'm planning to have turkey and ham, plus we'll cover the rolls. What are you bringing?
Guest: Let's see, we'll bring the green bean casserole and some chicken and dumplings. Do you know who's bringing dessert?
Every holiday gathering, then, turns into one big pitch-in dinner - with very few leftovers. We make the tried and true holiday dishes - green bean casserole, turkey, mashed potatoes and gravy - but we also conjure up old family favorites, like my great grandmother's sugar cream pie or my dad's recipe for pumpkin pie. In this way, we connect as a family and honor our past.
For this reason, I'd like to share a couple of apple recipes (seeing as how it's apple season) that are family favorites. One is an older recipe of my grandmother's that I enjoyed while growing up, and the other is a cookie recipe of my own concoction, based on the traditional favorite Apples Brown Betty. You'll find an unusual ingredient in the second recipe instead of eggs, but don't let it turn you off or freak you out. I've been using this ingredient in my cookies for several years and it makes for a soft, chewy and rich cookie. Enjoy!
Grandma Doty's Baked Apples
2 quarts peeled and cored apples, either sliced or quartered
2 C sugar
1/3 C flour*
1 T cinnamon
1 ½ C water
• Preheat oven to 375°.
• Place the apples in a large baking dish.
• In separate bowl, blend together sugar, flour and cinnamon until all one color. To this mixture add water and stir until all lumps are gone.
• Pour over apples and stir. Place in oven and bake until apples are tender.
• Remove from oven and enjoy!
*My grandmother noted that if the sugar mixture was not thick enough after adding water, more flour could be used, but not as much as ½ C.
Liesl's Apple Brown Betty Cookies
1 C butter, softened
1 C sugar
1 C brown sugar
½ C plain, non-fat yogurt
2 t vanilla
2 C oats, uncooked
2 C flour
1 t baking soda
½ t salt
1 t cinnamon
Pinch nutmeg
Pinch cloves
2 Granny Smith apples
Lemon juice
• Preheat oven to 350 degrees.
• Peel, core and dice the apples. Place in a bowl and sprinkle lemon juice on the pieces. This will prevent the apples from turning brown.
• Mix flour, oats, baking soda, salt, cinnamon and nutmeg in a medium mixing bowl. Set aside.
• In large bowl, with an electric mixer, blend butter, sugar, brown sugar, yogurt and vanilla until creamy. Gradually add oat mixture and mix until blended. Because of the texture of the oats, the dough will not be smooth.
• Drain lemon juice off apples, if present. By hand, stir in diced apples. Drop by tablespoons* onto ungreased** cookie sheet, about 2 inches apart. Bake until browned, about 12 - 15 minutes. Cool completely on wire rack.
*To ensure a uniform size to your cookies, I recommend using a mini ice cream scoop or a cookie scoop. You can usually find these in the kitchen gadget aisle of any big box retailer.
**For best results, I recommend using parchment paper on your cookie sheet. Parchment paper can be reused several times within a baking session and saves wear and tear on your cookie sheets.
